- 1/2 c. oil
- 3 Tbsp. flour
- 1 bunch green onions
- 1 can tomato paste
- 2 bell peppers
- 2 tsp. salt
- 2 tsp. pepper
Directions

1Boil chicken. Save stock. Debone chicken. Make a roux. Add onions, bell pepper and tomato paste. Stir 10 minutes over medium heat. Add 2 cups chicken stock and 1 cup water. Add salt and pepper. Add chicken and cook slowly for 30 minutes. Serve over rice. Serves 8 to 10.
