  • 3 chicken breasts
  • 1/4 c. olive oil
  • 1 large can whole tomatoes
  • 1 tsp. salt
  • 1/2 c. minced green onion
  • 5 Tbsp. chopped green peppers
  • 1/2 c. white wine
  • pinch of black pepper
  • pinch of cayenne
  • 1 Tbsp. minced parsley
  • 1 bay leaf
  • 3 cloves garlic, minced
  • 1 sprig thyme

Directions

    Cover chicken in salty water and soak overnight in refrigerator.

    Drain and dry with paper towels.

    In quart saucepan, combine tomatoes and spices.

    Cook 20 minutes while sauteing other ingredients.

    Thicken with 1 tablespoon of flour. Add wine.
