- 1/4 c. olive oil
- 1 large can whole tomatoes
- 1 tsp. salt
- 1/2 c. minced green onion
- 5 Tbsp. chopped green peppers
- 1/2 c. white wine
- pinch of black pepper
- pinch of cayenne
- 1 Tbsp. minced parsley
- 1 bay leaf
- 3 cloves garlic, minced
- 1 sprig thyme
Directions

1Cover chicken in salty water and soak overnight in refrigerator.

2Drain and dry with paper towels.

3In quart saucepan, combine tomatoes and spices.

4Cook 20 minutes while sauteing other ingredients.

5Thicken with 1 tablespoon of flour. Add wine.
