- 16 oz cooked boneless skinless chicken breast
- 1 cup fat free chicken broth
- 16 oz red potatoes, unpeeled, diced into 1/4 inch pieces
- 3/4 tsp thyme
- 1/4 tsp pepper
- 1 tsp salt
- 1/2 tsp onion powder
- 2 tbsp chopped parsley
- 1 cup seasoned bread crumbs
- 2 beaten egg whites (optional)
Directions

1preheat oven to 350 degrees

2cut cooked chicken into large chunks.

3place into a food processor and process until finely chopped.

4pour broth, potatoes, thyme, pepper, salt and onion powder into a medium saucepan and bring to a boil.

5cover and reduce heat to medium-low and cook until potatoes are tender, about 7 minutes.

6with a slotted spoon, remove potatoes to a large bowl.

7mash with a fork and set aside.

8keep broth if needed.

9in a medium bowl, combine chicken and parsley.

10stir in mashed potatoes.

11divide chicken mixture into 10 equal portions and shape into cone-shaped croquettes.

12if mixture is dry, add broth until they hold their shape.

13if using egg, dip each croquettes in egg white and then in bread crumbs.

14place croquettes on sprayed baking pan and bake 20- 30 minutes until golden brown.
