  • 1 roasting chicken (21/2-3lbs)
  • 12 cup butter
  • 3 onions, sliced
  • 1 tablespoon curry powder
  • 1 cup boiling water
  • 1 bouillon cube
  • salt and pepper

Directions

    Melt butter; add onion and saute until brown.

    Remove onion and set aside.

    Add seasoned chicken cut into small pieces.

    Saute until browned.

    Add onions back to pan, plus curry powder, hot water in which bouillon cube has been dissolved.

    Cover and simmer until tender (45-60 min).

    Don't add water during cooking.

    Serve on steamed rice.
