- 3 lb. chicken pieces
- 3/4 c. chopped onion
- 1/2 c. chopped celery
- 1 tsp. minced garlic
- 2 Tbsp. curry powder
- 1 bay leaf
- 1 c. cubed apples
- 1/3 c. diced banana
- 1 1/2 c. chicken broth
- 1/2 c. heavy cream or yogurt
Directions

1Sprinkle chicken pieces with salt and pepper.

2Melt 4 tablespoons of butter in skillet.

3Add chicken pieces and cook 5 minutes on one side until golden.

4Add onion, celery, garlic and curry powder.

5Stir well and cook 5 more minutes.

6Add bay leaf, apples and banana and cook 5 more minutes, stirring gently.

7Add chicken broth and simmer 15 minutes or until chicken is tender. Remove chicken pieces and stir cream or yogurt into sauce.

8Return chicken to sauce.

9Serve with rice.
