- 10 to 12 chicken thighs
- 4 fresh tomatoes
- 2 large onions
- 5 garlic cloves
- fresh ginger root (optional)
- 3 Tbsp. curry powder
- salt and pepper to taste
- 5 Tbsp. olive or cooking oil
Directions

1Chop onions; saute in oil until soft.

2Crush garlic; add to onions.

3Chop or puree tomatoes; add to onions and garlic.

4Add the salt, pepper and curry powder to the sauce.

5Simmer for 5 minutes.

6You may need to add a little water to the sauce.

7Pull all skin and fat from chicken.

8Add chicken to sauce and simmer for 45 minutes, stirring occasionally.

9Serve with pita bread, rice and salad sprinkled with lemon.
