  • 4 Tbsp. butter or butter and oil
  • 1 small onion, finely chopped
  • 1 clove garlic, finely chopped
  • 1 (14 oz.) can or homemade chicken broth
  • 2 Tbsp. Dijon mustard
  • 1/2 tsp. tarragon

    Remove from skillet and pour off all but 2 tablespoons fat.
