- 3 Tbsp. butter
- 4 chicken breasts, split, skinned and deboned
- 2 Tbsp. flour
- 1 c. chicken broth
- 1/2 c. light cream
- 2 Tbsp. Dijon mustard
- 2 tomatoes, cut into wedges
- 2 Tbsp. minced fresh parsley
Directions

1Melt butter in a large skillet.

2Add chicken breasts and cook until done and lightly browned, about 20 minutes.

3Remove chicken to a warm serving platter. Stir flour into drippings in the skillet and cook for 1 minute.

4Add the chicken broth and light cream.

5Stir and cook until the sauce thickens and bubbles.

6Stir in the mustard.

7Return the chicken to the skillet, cover and heat for 10 minutes.

8Garnish with tomatoes and sprinkle with parsley. Serves 4.
