Chicken Divan

Ingredients

  • 3 chicken breasts, halved
  • 6 slices boiled ham
  • 6 finger-size pieces Swiss cheese
  • 6 spears fresh or frozen broccoli, split
  • 4 fresh mushrooms
  • 2 Tbsp. white wine (if desired)
  • salt and pepper to taste

Directions

    Remove bones from chicken, but leave skin on.

    Place skin side down; pat and spread to make cutlet.

    On each breast half, put a slice of ham, a piece of cheese and a spear of broccoli (put flowerets at each end).

    Roll up chicken.

    Fasten with toothpicks. Place on rack in baking pan with a small amount of water underneath.

    Cover and bake 30 minutes.

    Uncover and bake 30 minutes longer, or until done.

    Serve with a sauce made from the drippings, mushrooms and white wine, if desired.
