Ingredients

  • 1 FOR CHICKEN
  • 1 1/2 lb boneless skinless chicken breasts cut into 1/4 inche slices
  • 1/2 cup sour cream combined with 1teaspoon lemon juice
  • 1/2 cup flour
  • 1/2 cup grated parmesan cheese
  • 1 tsp cajun seasoning
  • 1 tsp black pepper and salt to taste
  • 1 tbsp olive oil
  • 1 tbsp butter
  • 1 lb fresh broccoli cooked in boiling salted water until crisp tender
  • 1 FOR SAUCE
  • 1 small onion, chopped
  • 2 minced garlic cloves
  • 3 tbsp flour
  • 3 tbsp butter
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1/4 cup grated parmesan cheese
  • 1/2 tsp cajun seasoning
  • 1/2 tsp black pepper and salt only if needed
  • 1 tsp hot sauce such as franks brand
  • 1 tsp fresh lemon juice
  • 1 FOR TOPPING
  • 1 1/2 cup shredded cheese, I used a blend of pepper jack and sharp cheddar

Directions

    Line a heatproof platter with cooked broccoli.

    Combine flour,parmesan cheese, cajun seasoning, pepper and salt.

    Brush chicken lightly with sour cream, add to flour/ cheese mixture shaking off excess.

    Heat the olive oil and butter in a large skillet and sear chicken, turning once until golden and cooked through Remove chicken as done to top broccoli on platter..

    Preheat oven broiler to high, have your rack about 3 inches from broiler.

    Into skillet where chicken was cooked make sauce.

    melt butter, add onion and garlic and soften, add flour and whisk 2 minutes, it will be thick, add all sauce ingredients and whisk until smooth, bring to a boil and cook until thickened to a sauce consistancy.

    Top chicken with sauce, evenly top with shredded cheese.

    Place under broiler and heat until cheese melts and all is hot.

    Serve with crusty bread or rolls.
