Ingredients

  • 1 chicken, deboned
  • 1/2 stick butter
  • 1 1/2 c. chopped onion
  • 3 green onions, chopped
  • 1 c. celery, chopped
  • 1 large pone corn bread (Gladiola mix)
  • 4 c. Progresso bread crumbs
  • 4 hard-cooked eggs, finely chopped
  • 6 c. broth
  • 1 tsp. poultry seasoning
  • 2 raw eggs
  • salt and pepper to taste

Directions

    Saute onion and celery in butter for 5 to 10 minutes.

    Mix with Progresso bread crumbs and corn bread and chopped eggs in a large bowl.

    Add broth and seasonings and mix, then add raw eggs.

    Mix well.

    Bake covered in a greased baking pan in a 350° oven for 30 to 45 minutes.

    Remove foil last few minutes to brown lightly. Gravy is made from leftover broth.
