- 1 whole hen
- 2 c. flour
- 1 tsp. soda
- 1 tsp. baking powder
- pinch of salt
Directions

1Cook one whole hen in large pan on top of stove.

2Add water continuously as it boils and evaporates.

3Salt hen.

4Cook for about 4 hours or until tender.

5Remove from pot and brown in oven. Dip out 1 cup of broth from cooking pan.

6Set broth aside until it is cool, but still warm.

7Mix in flour, soda, baking powder and salt until dough has a biscuit-like consistency.

8Knead and roll out 1/4-inch thick on floured board.

9Cut in strips until dumpling pieces are about 2 x 2-inches.

10Bring remaining broth in cooking pan to a boil.

11Drop dumplings in one at a time.

12Cook until tender with a fork.
