- 2-1/4 lb. chicken
- 2-1/8 oz. mushrooms, sliced
- 5-5/8 oz. ham, diced
- 2 md. onions, sliced
- 2 md. tomatoes, sliced
- 3 tsp. oil
- 1/4 qt. chicken stock
- Salt and pepper, to taste
Directions

1Joint chicken, discard skin and fats.

2Heat oil in pressure cooker; add chicken and saute until light brown.

3Add ham onions, mushrooms and tomatoes, stock and seasoning.

4Close pressure cooker and bring to full cooking pressure on maximum heat.

5Reduce to medium heat; cook for a another 10 minutes.

6Turn heat off and allow cooker to cool gradually.

7Open and serve hot.
