- 6 flour tortillas
- 3 Tbsp. oil
- 1 small onion, chopped
- 4 oz. cream cheese
- 10 oz. enchilada sauce
- 2 c. Cheddar cheese
- 4 boneless, skinless chicken breasts
Directions

1Heat oil in skillet.

2Fry tortillas in hot oil 30 seconds per side.

3Set aside.

4Cook pieces chicken breasts in skillet.

5Add chopped onion.

6Cook until tender.

7Mix in cream cheese; cook until melted.

8Remove from heat.

9Fill each tortilla with equal portions of chicken mixture.

10Roll tortillas and place in ungreased 9 x 13-inch pan.

11Cover with enchilada sauce and Cheddar cheese.

12Bake at 350° until cheese is melted, approximately 20 minutes.
