  • 8 large tortilla shells
  • 1 pt. sour cream
  • 3 c. chopped cooked chicken
  • 2 c. shredded Cheddar cheese
  • 1 small jar black olives (optional)
  • 1/2 pkg. Hidden Valley Ranch dressing
  • 1 large jar chunky salsa (medium)

Directions

    Mix together everything but the salsa.

    Stuff mixture into tortilla shells evenly and wrap.

    Place enchiladas seam side down in baking dish (9 x 13-inch).

    Cover with aluminum foil and bake for 20 minutes at 375°.

    Remove from oven and immediately pour salsa over top.

    (Low-fat sour cream and cheese can be used in this recipe.)
