- 8 large tortilla shells
- 1 pt. sour cream
- 3 c. chopped cooked chicken
- 2 c. shredded Cheddar cheese
- 1 small jar black olives (optional)
- 1/2 pkg. Hidden Valley Ranch dressing
- 1 large jar chunky salsa (medium)
Directions

1Mix together everything but the salsa.

2Stuff mixture into tortilla shells evenly and wrap.

3Place enchiladas seam side down in baking dish (9 x 13-inch).

4Cover with aluminum foil and bake for 20 minutes at 375°.

5Remove from oven and immediately pour salsa over top.

6(Low-fat sour cream and cheese can be used in this recipe.)
