- 3 chicken breasts
- 1 onion, chopped
- 1 red or green pepper, chopped
- 1 tsp. cilantro
- 1 can fat-free refried beans
- 10 soft tortillas
- 1 can enchilada sauce
- 1 can tomato sauce
- 1 c. shredded Cheddar cheese
Directions

1Cut chicken breasts into bite-size pieces.

2Saute in 1 tablespoon oil with onion, pepper and cilantro until tender.

3Add beans.

4Mix.

5Mix enchilada and tomato sauces in small bowl. Cover bottom of 13 x 9-inch pan with small amount of sauce. Divide chicken mixture into 10 servings.

6Place in tortillas and roll.

7Place rolls in pan; cover with remaining sauce and cheese. Bake 25 to 30 minutes at 350°.

8Serve with sour cream.
