  • 3 chicken breasts, cooked and shredded
  • 1 onion, chopped and placed in small dish to soften in microwave
  • 1/2 c. salsa
  • 8 oz. can chopped Ro-Tel tomatoes, divided
  • 3 oz. grated Mozzarella cheese
  • 8 flour tortillas
  • 1/2 c. tomato puree
  • 1/2 tsp. dried minced garlic
  • 3 drops Tabasco sauce

    Combine chicken, 1/2 cup chopped, cooked onion, 1/4 cup salsa and 1/4 cup Ro-Tel tomatoes.

    Set aside.

    Heat tortillas in microwave to soften.

    Place 3 tablespoons chicken filling in the center of each tortilla and roll; arrange seam side down in shallow ovenproof baking dish.
