Chicken Enchiladas

Ingredients

  • 1 pkg. flour tortillas
  • 1 can cream of chicken soup
  • 1 (16 oz.) sour cream
  • 1 can green chilies (mild or hot) to taste
  • 1 bunch scallions
  • 1/2 to 1 c. boneless chicken, cut up into chunks
  • grated Cheddar cheese

Directions

    In a bowl combine soup, sour cream, chicken, green chilies and 1/2 bunch scallions.

    Stir until mixed well.

    Put 2 or 3 tablespoons of mixture into a tortilla.

    Roll and place in baking dish or pan.

    Coat with Pam.

    Place the tortillas next to one another so they are touching.

    Fill all tortillas and pour any additional mixture over the tortillas.

    Top with cheese and 1/2 bunch of scallions.

    Cover and bake at 350° for 20 to 25 minutes. Serve with lettuce, tomato, sour cream, guacamole, etc.
