  • 1 medium onion, chopped
  • 1 can cream of chicken soup
  • 1 cooked, deboned chicken
  • 1 c. chicken broth (from cooked chicken)
  • 3 Tbsp. butter
  • 1 can cream of mushroom soup
  • 1 small can tomatoes with green chiles, chopped (Ro-Tel)
  • 1 pkg. flour tortillas
  • 1 lb. Longhorn cheese, grated (for topping)

Directions

    Tear tortilla shells in pieces.

    In 9 x 13-inch casserole dish, layer the tortillas, chicken, soups and cheese.

    Repeat until all are used.

    Top with cheese.

    Bake at 350° for 30 minutes.
