Chicken Enchiladas

  • 2 1/2 to 3 lb. chicken, cooked, boned and diced
  • 1 jar mild salsa supreme (small)
  • 1 small can mushrooms (stems and pieces)
  • 1 can mushroom soup
  • 2 c. chicken broth
  • 2 c. grated Cheddar and Mozzarella cheese
  • 1 small bag Doritos
  • 1 small can black olives, sliced

Directions

    Place prepared chicken in a 9 x 13-inch baking dish.

    Sprinkle olives over top.

    Spread on Doritos and mash them down slightly to crush.

    Add 3/4 of the cheeses.

    In saucepan, bring to a boil: salsa, broth, soup and mushrooms.

    Pour hot liquid over chicken mixture.

    Add remaining cheeses over the top.

    Bake 20 minutes or until bubbly at 350°.

    Serve with rice.
