Chicken Enchiladas

Ingredients

  • 1 medium onion, chopped
  • 2 to 3 Tbsp. margarine
  • 1 can cream of mushroom soup
  • 1 can cream of chicken soup
  • 1 c. chicken broth
  • 1 small can chopped green chilies
  • 1 chicken, boiled (2 to 3 lb.)
  • 1 pkg. corn tortillas
  • 1 lb. Longhorn cheese, grated

Directions

    Brown onion in butter.

    Combine with soups, broth and chilies. Add pieces of chicken and mix well.

    In large baking dish, place a layer of tortillas, chicken and cheese.

    Repeat layers until casserole is filled, ending with cheese.

    Bake at 350° for 1 hour. (Better if sets a couple of hours before baking, can also be frozen.)
