- 1 green onion
- 1/2 onion
- 1/4 tsp. salt
- pepper
- 4 ripe olives
- 1/2 can enchilada sauce
- 4 corn tortillas
- 5 Tbsp. grated Jack cheese
Directions

1Cook chicken breast in enough water to cover.

2Add 1/2 onion, salt and dash of pepper; bring to a boil, then cook 20 to 25 minutes on low heat or until tender.

3Remove skin and bones from chicken; cut into small pieces.
