  • 1 pkg. soft shell tacos
  • 3 boneless chicken breasts
  • 1/2 onion, chopped
  • 1 green pepper, chopped
  • 2 cans cream of chicken soup
  • 1 Tbsp. oil
  • 3/4 c. water
  • 1 pkg. shredded Cheddar cheese
  • sour cream and salsa (for garnish)

Directions

    Cut chicken breasts into strips and saute chicken, onion and green pepper in oil until chicken is fully cooked. Pour in soup and 3/4 cup of water. Simmer for about 5 minutes. Fill soft taco shells with mixture and roll them up. Place enchiladas in a baking dish and cover with shredded cheese. Bake at 350° until cheese is fully melted. Serve with garnish (sour cream and salsa).
