  • 1 whole Small Onion
  • 1- 1/2 cup Cooked, Shredded Chicken Breast
  • 3/4 cups Shredded Cheddar Cheese, Divided
  • 3/4 cups Salsa
  • 1 Tablespoon Green Chiles
  • 8 ounces, weight Cream Cheese
  • 1 jar (about 11 Oz. Jar) Green Enchilada Sauce

Directions

    Preheat oven to 350 degrees.

    Heat some oil in a large skillet.

    Add onion; cook over medium-high heat for 4-5 minutes or until tender.

    Add chicken, 1/2 cup of cheddar cheese, salsa, green chiles and cream cheese.

    Heat and stir for 2-3 minutes until cheeses are melted.

    Spoon about 1/3 cup of the chicken mixture down the center of each tortilla; fold and place fold side down in a 9x13 baking dish.

    Drizzle the jar of green enchilada sauce on top of the tortillas.

    Sprinkle remaining cheddar cheese over green sauce.

    Cover dish with foil and bake for 15-20 minutes or until heated through and cheese on top is melted.

    Makes 4 servings if youre famished, 6 servings if youre just hungry like normal.
