- 2 whole chicken breasts
- 1 c. water
- 1 c. Monterey cheese
- 1 (4 oz.) diced green chilies, drained
- 1/2 tsp. ground cumin
- 16 flour tortillas
- shredded lettuce
- guacamole dip
- sour cream
- salsa sauce
Directions

1Boil chicken until tender.

2Drain well.

3Let stand cool. Shred chicken and add cheese, chili peppers and cumin.

4Heat tortillas to soften.

5Overlap 2 tortillas by about half.

6Spoon about 1/3 cup of chicken mixture down center and roll up tightly. Fry in skillet of oil until crisp and golden brown.

7Drain.

8Serve on lettuce bed with guacamole, sour cream and salsa.
