- 4 chicken fillets
- 1 c. milk
- 1 c. breadcrumbs
- 1 c. grated Parmesan cheese
- 2 Tbsp. chopped parsley
- 1 c. olive oil
- salt and pepper
- 1 lemon, sliced thin
- 1 c. white wine
- 1/4 c. lemon juice
- 1 c. chicken broth
- butter
Directions

1Soak chicken in milk 10 minutes.

2Mix breadcrumbs, cheese and parsley.

3Dredge each piece of chicken in the breadcrumb mixture. Pour oil into skillet and braise chicken quickly on each side until lightly browned.

4Do not overcook.

5Put chicken in a lightly buttered baking dish.

6Season lightly with salt and pepper.

7Place 1 slice of lemon on top of each chicken piece.

8Remove all but 1 tablespoon of oil from skillet, leaving residue from chicken.

9Add wine and boil until liquid is reduced by 1/2.

10Add lemon juice and chicken broth.

11Boil until liquid is reduced by 1/2 and pour over chicken.

12Bake at 350° until liquid bubbles, about 20 to 25 minutes.
