- 1 (3 1/2 lb.) chicken, cut up
- 3 Tbsp. butter
- 2 Tbsp. flour
- 1/3 c. chopped onion
- 1 clove garlic, minced
- 5 sprigs fresh tarragon
- 1 carrot, peeled, quartered and cut in 1-inch lengths
- 1/4 lb. mushrooms
- 1 1/2 c. water
- 1 c. cream
- 1 Tbsp. chopped tarragon
Directions

1Fry chicken in butter (use heavy skillet) for 5 minutes; add onion, garlic and tarragon sprigs.

2Sprinkle with flour, stirring to distribute flour evenly.

3Add water and carrots.

4Cover and cook for 20 minutes.

5Remove chicken and keep warm.

6Let the sauce cook down, stirring often, for about 5 minutes.

7Remove tarragon; add cream, salt and pepper.

8Simmer 3 minutes.

9Stir in chopped tarragon and serve with rice.

10Serves four.
