Ingredients

  • 1 chicken, boiled and boned
  • 2 c. instant rice, prepared
  • 6 to 8 slices bacon, fry crisp and crumble
  • 1 bell pepper, chopped
  • 1 medium onion, chopped
  • 2 medium carrots (large), grated
  • 1 can water chestnuts (optional)
  • soy sauce (optional)
  • frozen green peas (optional)

Directions

    Saute 3 vegetables in part of bacon grease.

    When done, pour over rice (using as much of the bacon grease as desired).

    Add the chopped chicken and the bacon.
