Chicken Fried Rice

- 2 chicken breasts, boned and cut into approximately 1 x 3/4 x 3/4-inch pieces
- 2 large eggs
- 4 Tbsp. frozen peas
- 3 stalks green onion, chopped
- 1/2 c. chopped onion
- 2 Tbsp. cooking oil
- 2 Tbsp. soy sauce
- 2 Tbsp. oyster sauce (most markets carry in oriental food section)
- 4 c. cooked long grain rice (do not use instant rice)
- 1/2 tsp. cornstarch
Directions

1Scramble eggs until firm; break up into small pieces. Set aside.

2Marinate chicken pieces with 1/2 soy sauce, cornstarch and 1 tablespoon water for 30 minutes to 1 hour.

3Heat oil in frying pan (medium-high heat).

4Fry chicken pieces, separating pieces at the same time, for 2 1/2 minutes or until chicken is cooked.

5Set aside.

6Using the same frying pan, stir-fry onion, green onion and frozen peas for 2 minutes.

7Reduce heat to low; add cooked rice, soy sauce and oyster sauce.

8Mix and stir; add cooked egg and chicken.

9Mix well.

10Makes 4 servings.
