  • 8 thin slices round steak or minute steaks (1 lb.)
  • 1 egg, beaten
  • 3/4 c. bread crumbs
  • 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 4 Tbsp. oil or bacon drippings
  • 2 Tbsp. flour
  • 1 c. broth or milk

    Put beef slices between sheets of plastic wrap.

    With flat side of mallet, pound until about 1/4 inch thick.

    Dip beef into the beaten egg and then into bread crumbs, mixed with salt and pepper.

    Heat fat in heavy skillet over medium to low heat.

    Brown steak 8 to 10 minutes on each side.

    Place steaks on warm platter. Keep hot.
