Ingredients
- 2 lbs chicken legs or 2 lbs chicken thighs, w/skin on
- marinade
- 1/2 cup olive oil
- 3/4 cup white wine vinegar
- 2 stalks celery, chopped into small cubes
- 2 carrots, peeled and chopped into small cubes
- 2 -3 cloves garlic, chopped
- 1 teaspoon oregano
- freshly ground black salt & pepper
Directions

1Place chicken pieces in a glass dish, 9 x 13.

2In a medium bowl, mix together all marinade ingredients.

3Pour marinade over chicken pieces and marinate for at least 1/2 day or overnight (in refrigerator).

4Put everything, marinade and all, in a 350 oven and bake for 45 minutes.

5After 45 minutes, put under broiler to crisp chicken on all sides.

6Serve w/ pan drippings and mash potatoes.
