- 5 lb. stewing chicken
- flour
- 1/4 c. bacon fat
- 10 c. boiling water
- 2 c. chopped tomatoes
- 1/2 c. corn kernels
- 1 c. sliced okra
- 1 large green pepper, diced
- 1 carrot, diced
- 1 c. chopped celery
- 1/2 tsp. salt
- fresh ground pepper to taste
- 1/4 c. diced onion
- 1/4 c. raw rice
Directions

1Cut the chicken into pieces, and dredge each piece in flour. Brown the pieces in the bacon fat, then pour in 5 cups of boiling water.

2Simmer the chicken, uncovered, until the meat falls from the bones.

3Drain the broth.

4Bone, skin and chop the meat. Reserve the meat and broth only.
