- 3 lb. chicken, cut in pieces for serving
- salt and pepper
- flour (for dredging)
- pork fat (for frying)
- 1/2 onion, finely chopped
- parsley
- 4 c. sliced okra, cooked or canned
- 1/4 red pepper, finely chopped or 1 pimiento
- 1 1/2 c. tomatoes
- 3 c. boiling water
- 1 c. boiling rice
Directions

1Sprinkle chicken with salt and pepper.

2Dredge with flour. Fry (saute) in pork fat.

3Remove chicken.

4Fry onion in fat remaining in pan; add okra, parsley or pimiento and red pepper. Cook slowly 15 minutes.

5Add to chicken with tomatoes, water and 1 1/2 teaspoons of salt.

6Cook slowly until chicken is tender and add rice.
