- 1 (3 lb.) chicken
- 2 qt. water
- 3 Tbsp. butter
- 3 Tbsp. flour
- 1/2 red pepper (bell), chopped
- 1 1/2 lb. sliced okra
- 1 c. diced celery or onion
- 1 (28 oz.) can peeled tomatoes
- 1 (18 oz.) can corn
- 2 tsp. chopped parsley
- 1 tsp. sugar
- 1 c. rice, cooked
Directions

1Cook chicken in water until tender.

2Remove from water.

3Cool. Debone and tear meat into pieces.

4Melt butter in large saucepan. Stir in flour.

5Cook.

6Stir until golden brown.

7Add vegetables and chicken broth.

8Cook vegetables until tender and gumbo is thick.

9Add chicken, rice, parsley and sugar.

10Season to taste. Serves 6.
