- 2 lb. boneless chicken
- 1 clove garlic, crushed
- 1 tsp. salt
- 1/2 tsp. pepper
- 1 (8 oz.) can bamboo shoots, undrained and sliced
- 1 (8 oz.) can sliced mushrooms, undrained
- 1 carrot, sliced and cut in strips
- 1 bunch watercress, washed and sliced
- 1/2 c. sugar
- 1/4 c. shoyu
- 1 bunch green onions, sliced
Directions

1In skillet, brown chicken with garlic.

2Add salt and pepper. Add bamboo shoots and mushrooms, including liquid.

3Add carrots and simmer for 3 minutes.

4Add sugar and shoyu and simmer for an additional 3 minutes.

5Add watercress and green onions until desired tenderness or crispness of watercress.

6Season to taste. Yield: 4 to 6 large portions.
