- 1 broiler fryer
- 1/4 c. flour
- 1/4 tsp. salt
- dash of pepper
- 1/2 c. chopped onion
- enough oil to fry the chicken
- 1 (1 oz.) jar peach preserves
- 1/4 c. barbecue sauce
- 1 (6 oz.) can water chestnuts, drained and sliced
- 2 Tbsp. soy sauce
Directions

1Cut chicken into chunks. Coat with flour and brown.

2Combine preserves, barbecue sauce, onion and soy sauce; pour over drained browned chicken. Cover and simmer 40 minutes. Add chestnuts the last 10 minutes. Serve chicken on a bed of hot rice.
