Ingredients
- 1 pkg. chicken combo pack
- 2 slices bacon
- 1/2 tsp. salt
- 1/8 tsp. pepper
- 3/4 c. uncooked medium grain rice
- 1/2 c. chopped onion
- 1 Tbsp. chicken flavor instant bouillon
- 2 c. hot water
- 1/8 tsp. bottled hot sauce
- 1 (15 oz.) can black-eyed peas, drained
- 1/4 c. chopped parsley
- 1/2 tsp. thyme leaves, crushed
Directions

1In a large fry pan, cook bacon over medium heat until crisp. Drain, crumble and reserve.

2Drain all but 2 tablespoons drippings from fry pan.

3In the same fry pan, place chicken and cook, turning, until brown on all sides.

4Sprinkle with salt and pepper. Adjust temperature to low.

5Cover and simmer for 15 minutes.

6Add rice and onion to chicken in fry pan.

7Dissolve bouillon in water. Add hot sauce and stir.

8Pour over chicken.

9In a medium bowl, mix black-eyed peas, parsley and thyme.

10Add to fry pan.

11Stir gently to mix.

12Cover and cook about 25 minutes.

13Sprinkle with bacon.
