- 2 lb. chicken breasts
- 1 Tbsp. butter
- 1/4 lb. mushrooms, quartered
- 1 tsp. cornstarch
- salt
- nutmeg
- 2 Tbsp. minced onion
- 2/3 c. Chablis
- 2 tsp. Chablis
Directions

1Bone and skin chicken breasts and sprinkle with salt and nutmeg on both sides.

2Brown in butter.

3Add onion, mushrooms and 2/3 cup of Chablis.

4Bring to a boil, cover, reduce heat and simmer for 15 minutes.

5Remove chicken to warm platter.

6Bring pan juices to a boil and cook, stirring until liquid is slightly reduced.

7Stir in a mixture of cornstarch and 2 teaspoons Chablis.

8Cook and stir until thickened.

9Spoon sauce over chicken.
