Ingredients
- 1 lb boneless, skinless chicken breasts cut into 1 1/2 inch pieces
- 1/3 cup light vidalia onion salad dressing
- 1 medium size zucchini, trimmed, halved lengthwise and cut into 1/2 inch rounds or pieces
- 1 each sweet orange and red pepper, cored and cut into pieces
- 1/2 yellow pepper, cored adn cut into 1-inch pieces
Directions

1Soak 12 inch bamboo skewers in warm water.

2combine chicken and dressing into resealable plastic bag.

3refrigerate to marinate, 30 minutes.

4put zucchini and peppers into microwave safe bowl and cover with plastic venting one corner.

5microwave veggies for 2 minutes to soften.

6heat grill to medium high.

7thread chicken, pepper piece, zucchini and a different color pepper piece onto a skewer.

8fill 6 skewers.

9grill kabobs 4 minutes per side until cooked through.serve with dipping sauce.
