Ingredients

  • 1 tsp sugar
  • 1 tsp salt
  • 1 1/4 inches fresh ginger, grated
  • 2 tbsp mirin
  • 1 tbsp sake
  • 1 tbsp Japanese soy sauce
  • 1 tsp sesame oil
  • 1 lb chicken thigh fillets, coarsely chopped
  • 1/4 cup all-purpose flour
  • None None grapeseed oil, for deep-frying

    Combine sugar, salt, ginger, mirin, sake, soy sauce and sesame oil in a medium bowl. Add chicken and toss to coat. Season. Cover and chill for 30 mins.

    Coat chicken in flour, shaking off excess. Heat grapeseed oil in a large, deep saucepan to 350°F. Deep-fry chicken, in batches, until golden brown. Drain on paper towels and season. Serve with lemon wedges.
