  • 4 large, skinless, boneless chicken breasts
  • 1 Tbsp. chopped green onion
  • 1 Tbsp. parsley
  • 1 clove garlic, minced
  • 1/2 of a 1/4 lb. stick margarine, chilled
  • 1 beaten egg
  • 1 Tbsp. water
  • 1/4 c. flour
  • 1/4 c. fine dry bread crumbs
  • 1 Tbsp. margarine
  • 1 Tbsp. cooking oil

Directions

    Place each breast between 2 pieces of clear plastic wrap. Working from the center to the edges, pound with flat side of meat mallet to 1/4-inch thickness.

    Remove plastic wrap.

    Sprinkle with salt and pepper.
