Chicken Lasagna

Ingredients

  • 3 Tbsp. butter
  • 1/2 tsp. basil or fresh basil
  • 1/4 lb. mushrooms
  • 1/2 c. chopped onion
  • 1 green pepper
  • 1 can cream of mushroom soup
  • 1/3 c. milk
  • 1 egg
  • 1/4 c. pimento
  • 4 to 5 c. chicken
  • 16 oz. drained cottage cheese
  • 2 c. Cheddar cheese

Directions

    Saute butter, basil or fresh basil, mushrooms, onion and green pepper.

    Mix together mushroom soup, milk, egg and pimento.

    Add to this mixture chicken, cottage cheese and Cheddar cheese.

    Line a buttered 9 x 13-inch pan with cooked lasagna noodles, then a layer of chicken-cheese mixture, noodles, cheese, etc., until mixture is gone.

    Make a basic white sauce with lots of garlic for the top layer of noodles and sprinkle generously with freshly grated Parmesan cheese.

    Bake at 325° for 1 hour.
