Chicken Lasagne

  • 1 green pepper
  • 1/2 onion, chopped
  • 1 (6 oz.) can mushrooms
  • 1 can cream of chicken soup
  • 1 jar pimentos
  • 1/2 tsp. basil
  • 3 c. diced, cooked chicken
  • 6 lasagne noodles
  • 2 c. or more shredded Cheddar cheese
  • 1 1/2 c. cottage cheese

    Sauce:

    Saute onion and green pepper.

    Add drained mushrooms, chicken soup, pimento and basil.

    Mix together.

    Layer noodles, chicken, cheese, cottage cheese and sauce; repeat.

    Sprinkle Parmesan on top.

    Bake at 350° for 45 minutes to 1 hour, uncovered, in 11 1/2 x 7-inch baking dish.
