- 4 Tortillas
- 1 1/2 Chicken Breast
- 1 cup Monterey Jack Cheese
- 1/4 cup Butter
- 3 tbsp Corn Starch
- 1 1/2 cup Chicken Broth
- 6 oz Sour Cream
- 1 Juice of Lime
- 5 Fresh Ground Pepper Cranks
- 2 tsp Cumin
- 1/4 cup Cilantro and Green Onion
- 1 Jalapeno Pepper
Directions

1Mix cheese and chicken together in a bowl.

2Roll chicken and cheese into tortillas and set on a baking dish.

3Melt butter in a pot.

4Next add corn starch and whisk until it thickens.

5Next add chicken broth to thin it out.

6Now add onion, jalapeno, cumin, lime juice, and pepper and sour cream.

7Drizzle over enchiladas.

8Top with more cheese.. Because why not?

9Bake for 25 minutes at 350F.
