  • 4 Tortillas
  • 1 1/2 Chicken Breast
  • 1 cup Monterey Jack Cheese
  • 1/4 cup Butter
  • 3 tbsp Corn Starch
  • 1 1/2 cup Chicken Broth
  • 6 oz Sour Cream
  • 1 Juice of Lime
  • 5 Fresh Ground Pepper Cranks
  • 2 tsp Cumin
  • 1/4 cup Cilantro and Green Onion
  • 1 Jalapeno Pepper

Directions

    Mix cheese and chicken together in a bowl.

    Roll chicken and cheese into tortillas and set on a baking dish.

    Melt butter in a pot.

    Next add corn starch and whisk until it thickens.

    Next add chicken broth to thin it out.

    Now add onion, jalapeno, cumin, lime juice, and pepper and sour cream.

    Drizzle over enchiladas.

    Top with more cheese.. Because why not?

    Bake for 25 minutes at 350F.
