Chicken-Liver Loaf

Ingredients
- 1/2 c. green onions, thinly sliced
- 2 eggs
- 1/3 c. yogurt or light sour cream
- 1/2 c. butter or margarine
- 1 clove garlic, crushed
- 1 lb. chicken livers, cut into pieces
- 1/2 tsp. salt
- dash of pepper
Directions

1In skillet, saute onions and garlic in butter until lightly browned.

2Add livers and cook 3 to 5 minutes or until juices no longer flow.

3In food processor, puree liver mixture until smooth. In a large bowl, beat remaining ingredients.

4Stir in liver puree (mixture will be thin).

5Turn into greased 7 x 4 x 2-inch loaf pan.

6Cover with foil.

7Bake for 1 hour at 300°.

8Cool, then chill thoroughly in pan.

9To serve, run knife around edge and unmold. Slice 1/2 inch thick.

10Makes 14 slices (108 calories per slice).
