Chicken Liver Scramble

- 1/2 lb. chicken livers
- 1/2 c. chopped onion
- 1/2 c. sliced celery
- 3 Tbsp. butter
- 6 eggs
- 1/2 tsp. salt
- pepper
- 1 (3 oz.) pkg. cream cheese, cubed
Directions

1Cook chicken livers, onion and celery in butter until vegetables are tender but not brown.

2Remove chicken livers and dice; return to skillet.

3Mix eggs and seasonings together and pour over liver and onion mixture.

4Add cream cheese.

5As eggs begin to set, draw turner across bottom to form large soft curds. Cook until eggs are thick but still moist.

6Makes 4 servings.
