- 1/2 lb. chicken livers
- salt
- 1 medium onion, minced
- 1/2 c. tomato juice
- 1 hard-cooked egg, minced
- 2 Tbsp. minced parsley
- 2 tsp. lemon juice
- pepper to taste
Directions

1Put chicken livers in saucepan and cover with cold water.

2Add 1/4 teaspoon salt, bring to boil and simmer 4 to 5 minutes.

3Drain and chop fine.

4Simmer onion in the tomato juice for 15 minutes. Mix livers, onion and remaining ingredients and whirl in blender until smooth.

5Pack in bowl and chill.

6Makes 1 1/2 cups, 18 calories per tablespoon.
