- 1/2 c. margarine
- 1 medium onion, minced
- 1/2 lb. mushrooms, sliced
- salt and pepper to taste
- 1 c. instant rice
- 2 c. chicken broth, boiling
- 1/2 lb. chicken livers
Directions

1Heat 1/4 cup margarine in heavy saucepan.

2Add onion and saute 2 to 3 minutes.

3Add mushrooms and cook 5 minutes.

4Add rice and stir until rice just begins to brown.

5Stir in boiling broth. Remove from heat and let stand, covered, for 10 minutes.

6Add a little more broth if mixture is too dry.

7Saute livers in remaining margarine, after dusting them with flour, until done.

8Add seasoning.

9Stir gently into rice mixture.
