- 1 (5 lb.) box chicken thighs
- 3 stalks celery
- 5 to 6 bundles long rice
- 10 green onions, sliced
- 2 1/2 to 3 qt. water
- 1 Tbsp. plus 2 tsp. sugar
- 1/3 c. shoyu
- 2 Tbsp. Hawaiian salt
- 4 to 5 cloves garlic
- 1 medium size piece ginger, crushed
Directions

1Cut up chicken (hekka style).

2Soak long rice in warm water for 30 minutes.

3Chop celery in fine pieces.

4Boil water with chicken pieces.

5Add Hawaiian salt, garlic, ginger, sugar, shoyu and celery.

6Cover and simmer for 1 hour or until chicken is tender.

7Cut long rice into desired length and add to chicken mixture.

8Add green onions and simmer for 20 minutes.

9Serve.
