- 1 1/2 lb. chicken breasts
- 1 1/2 Tbsp. oil
- 1 clove garlic, minced
- 3 c. chicken broth
- 1/2 tsp. ginger, minced
- 3/4 tsp. salt
- 1 bundle long rice
- 2 stalks green onion, thinly sliced
Directions

1Boil chicken pieces (to make broth).

2Set broth aside.

3Skin and debone chicken.

4Cut into pieces.

5Heat oil in skillet; saute chicken and garlic until brown.

6Add broth, ginger and salt. Simmer 1 hour.

7Soak long rice for 30 minutes.

8Add to chicken. Sprinkle with green onions.

9Serves 6.
